Enrique López is one of Mexico’s most highly regarded coffee producers. At his farm, Finca Chelín, his focus is on growing high quality varietals, and experimenting with different processing methods. In addition, he helps other producers in the region by providing educational training, talks, and access to buyers.

This lot is a new variety to us called pluma hidalgo. The cherries are picked very ripe, then floated to remove any rogue unripe cherries, before being laid to rest in concrete tanks for 24 hours. The cherries are then de-pulped, and fermented for a further 36 hours, with yeasts being added for the last 12 hours of fermentation. The coffee is then washed, and laid out to dry on patios (see image below) under direct sun for 2 days, then under shade.

The resulting coffee is soft, round and complex, with a silky mouthfeel, and notes of golden raisin, rose and plum.
