Ana is a first-generation coffee producer based in Concepción Huista, Huehuetenango. She and her husband established their farm, Nub’il Ha’, in 2007, before Ana later took full charge of coffee production. Nub’il Ha’ means “an union of two streams” in the local Popti language, a reference to the natural water sources that run through the mountains of Concepción Huista. One of these streams flows close to the farm, providing fresh water for processing. In the years since, Ana has strengthened her skills and knowledge through joining a cooperative, allowing her to focus on producing quality coffee while supporting her local community.

During harvest, only the ripest cherries are selected through four meticulous picking passes. The coffee is depulped the same day and fermented in mucilage for 36 hours before being washed and soaked again in clean water for an additional 12 hours, a process commonly known as double soaking in Kenya. It is then sun-dried on patios for six days until optimal moisture content is reached.

The result of Ana’s dedication is a clean, balanced, and expressive coffee that showcases both her land and her community at their best.
