Origin Story

This stunning example of the gesha variety is grown by Iginio and Rolando Fonseca at their farm El Encanto near Copey de Dota, in Costa Rica’s famed Tarrazú region. Iginio and Rolando are members of the Coope Dota cooperative based in nearby Santa María de Dota that we source our current house filter House Red from.

The gesha cherries are hand picked at peak ripeness, when sugar levels are at 18-20%. They are then delivered to Coope Dota for processing. On arrival they are fermented in cherry for up to 24 hours, before being mechanically pulped leaving around 25% of the fruit flesh still attached. The coffee is then fermented for an additional 16-18 hours before being washed and laid out to dry in a greenhouse on raised beds for 10-12 days until moisture levels reach 10-11%.

We can't recall enjoying a washed gesha more at Red Bank HQ, so best snap some up quick before we drink it all ourselves!
