About Moonshine
Sometimes it's the first test roast of a new coffee that we use to assess flavour profile, and any tweaks we might make to subsequent production roasts. Sometimes it's a coffee that we have contracted too much of and need a little help getting through.
We roast all coffee fresh to order each week, but due to minimum batch sizes on the roaster, there is usually some left over at the end of the week. This may also go out as Moonshine. We recommend that you rest our coffee for at least a couple of weeks post-roast before brewing, so in reality this will often mean that you will be receiving Moonshine as it’s approaching its peak.
It also means that Moonshine is often the most premium coffee on our menu. It’s a real privilege to offer expensive, rare varieties and experimental processes, but compared to our regular offering, these coffees sell relatively slowly, and with the minimum batch size of the roaster, there is often a good amount left unsold at the end of the week.
Recent batches of Moonshine have included a Mexican red honey gesha, a Rwandan washed nzinza, a Costa Rican natural F1 hybrid, and a Colombian 200 hour natural anaerobic, alongside more classic washed and natural coffees.
The coffee is delivered to you with just a batch number, so you can have fun guessing what the coffee might be. We keep a record of each batch, so if you really like the batch you receive, we’re happy to let you know what the coffee is.
Whatever you receive, it will always be speciality grade coffee sourced in adherence with all of our usual principles.
